Abstract
Nutrition and obesity were leading health indicators included in Healthy People 2020¹. In Hardin County, 21.7% of residents live in poverty, ⅓ of residents are considered overweight, and 44% of residents are at risk for high blood pressure². The purpose of this project is to improve health promotion in a group of adults in a rural setting, as these environments have been found to have high rates of obesity and chronic disease risks. This study will evaluate the impact of a comprehensive recipe book on nutrition knowledge, self-efficacy, and willingness to adjust health-related behaviors such as lifestyle changes in diet and exercise in a rural community. We hypothesize that providing this resource to Ada residents will improve nutrition knowledge, enhance perspective on personal health choices, and influence some degree of positive lifestyle changes in diet and activity.
The recipe book and surveys were approved by ONU IRB for reliability before distribution. The book consists of recipes collected from healthy resources using affordable ingredients that are verified to be available in local stores and markets. All participants must complete the pre-survey and consent forms before accessing the recipe book. The link was provided online via URL, ONU Healthwise accounts, and in the Ada Friendly Food Initiative Facebook group. Participants are required to complete the pre-survey before gaining access to the educational resource itself through a link. All participants will then receive a post-survey via email or text messages approximately 2 months after they complete the pre-research survey. All data including pre and post survey results is expected to be collected and finalized by June 1st, 2022.
